Father's Day Cupcakes

Hey everyone!
 
So in Britain, it is Father's Day Tomorrow and if, like me you are a little bit unorganised and haven't got round too or ahem forgotten (we have all done it!) to get something for your dad then this is a really effective and pretty simple solution!
 
My dad is a golf teacher so I couldn't think of a better thing to make than some golf inspired cupcakes! I am not normally one to venture into the novelty cakes territory, due to many stressful attempts in the past but trust me this is really easy to do! and it works for birthdays as well :) 
 
The recipe makes 18 cupcakes, 4 for the bunker section, 7 for the grass and 7 for the green!
 
How to make the cupcakes
 
 Ingredients:
160g caster Sugar160g Butter or Margarine
3 Medium Eggs
160g Self Raising Flour
1 Teaspoon on Vanilla Extract
18 Cupcake Cases

Frosting:
110g of Butter or Margarine
340g of Icing Sugar

5 digestive biscuits
Green food colouring

1) Preheat the oven to 180*C/350*F/Gas 4.
2)Cream the Butter and Sugar in a bowl until pale and fluffy
3)Add the eggs and vanilla extract
4)Fold in the flour slowly with a spatula
Spoon the mixture evenly into 18 cupcake cases
5)Bake for 15-20 minutes

Making the 'bunker' cupcakes:
The bunker is the sandy part of the golf course (yes that is as far as my knowedge of golf goes!) so I thought that the best way to create this was by using digestive biscuits!
 
Ice four cakes with plain frosting (ingredients above) and cover with crumbled digestive biscuit (pop about 5 in the food processor!)
Making the 'grass' Cupcakes
 
You should ice 7 cupcakes for the grass section
Add green food colouring to the remaining icing!
 Add half of this to a piping bag with a small nozzle, pip away in small strips
'The Green' Cupcakes
At this stage you can either chose to add more food colouring to make a darker green and apply to the remaining seven cupcake OR you can use a spray on green which I did!
 
Finishing Touches
I think that the flag is pretty self explanatory, a cocktail stick and some paper will do, for the golf ball I rolled some marzipan and covered it with icing sugar!
Voila! A teeny weeny edible golf course, what more could a dad want?!
