Truly Scrumptious, You're Truly, Truly Scrumptious...

Raspberry Cupcakes -
225g-caster sugar
1tsp-baking powder
210g-self raising flour
25g-cornflour
225g-unsalted butter
5 medium eggs
150g crushed fresh raspberries
  Preheat the oven to 180 degrees C and line a 12-hole muffin/cupcake tray with cases.
 Put the baking powder, flour and cornflour into a food processor. Pulse until evenly mixed. Add the remaining ingredients (except the raspberries). (looks a bit rank here, sorry about my presentation)

 Add the raspberries and mix through gently by hand.
 Seperate the mix into the 12 cases and bake for 25 mins.
 The cakes will appear fairly moist when cooked. (it's not actually burnt, just the photo :P )

For the Topping-
12 tsp- raspberry jam
115g-unsalted butter
60ml- skimmed milk
1tsp- vanilla extract
500g-icing sugar

Pipe the icing onto the cakes once they are cool in a spiral shape and top with raspberries. Sprinkle with icing sugar and voila!!
